Having followed the instructions that one of the soho66 staff posted on here, I still wasn't able to get any clients to connect and stay connected to the service. But after a bit of searching around, I found this:

The router is trying to be "helpful" and has it's own SIP handing which - as has been noted - isn't any good. If you follow the instructions in the link, you can disable thr SIP binding within the router and everything will work just fine.
For the record, our model in the office is the TG585v7, running the supplied 8.2.34.1 firmware. Hopefully this may help some users out there!
